Whisk the pancake ingredients together until you have a smooth batter. Now make your pancakes, frying them in a little oil.


Cook the walnuts, sugar and the coffee together, and then leave to cool. Peel the orange thinly and julienne the zest. Squeeze the oranges, then mix the juice with the sugar, water and orange, and heat until you have a syrup. Serve the pancakes filled with the walnut and coffee mixture, drizzled with the orange syrup.
